Jennifer Aniston salad

This salad began to appear in various news feeds with us at the house, and it did not take long before curiosity took over.

After some searching, we found out that this was not the salad that was eaten on the set during the Friends recording. This is according to the magazine Shape's interview with Jennifer Aniston.

But we thought the salad deserved a chance, so then it was just a matter of getting started in the kitchen.

This salad can easily becomes a regular feature here in the house. It tasted amazing

  • 1 cup quinoa or bulgur wheat ( Cook according to package)

  • 1 cup cucumber, chopped

  • ½ cup parsley, chopped

  • ½ cup mint, chopped

  • ⅓ cup red onion, chopped

  • ½ cup roasted and salted pistachios, chopped

  • 1 15-ounce can of chickpeas, drained and rinsed

  • 5 -6 tbs lemon juice

  • ¼ cup extra virgin olive oil

  • sea salt, to taste

  • ground pepper, to taste

  • ½ cup crumbled feta cheese

Wash and rinse the chickpeas

Prepare Bulgur according to the instructions on the package

Chop the pistachios, mint, parsley, cucumber, and red onion

Mix everything in a bowl, pour over lemon and olive oil

Season with pepper and salt and served with feta cheese

Can be prepared a few hours in advance, but must be kept cold.
